Milkless Lemon Poppy Seed Muffins Recipe

Servings: 9 medium or 18 mini- muffins

What you need:
Dry Ingredients

2/3 Cups
flour
·
½ Cup
packed brown sugar
·
½
teaspoon salt
·
2 ½
teaspoons baking powder
Wet Ingredients
·
2 large
bananas
·
1/3 Cup
apple juice (or orange juice)
·
1
teaspoon lemon juice
·
1
teaspoon zest from lemon
·
1/8 Cup
vegetable oil (can be increased to ¼ cup if
desired)
·
1
teaspoon vanilla extract
·
1 Cup
poppy seeds
What you do:
1.
Preheat
oven to 400°F and grease muffin tins.
2.
In a
medium bowl, blend dry ingredients thoroughly.
3.
In a
separate bowl, mash bananas. Add other wet ingredients to
the mashed bananas and mix.
4.
Add wet
mixture to dry and mix gently until moistened.
5.
Fill
muffin tins with batter.
6.
Bake
for 18–22 minutes. Remove from pan and
serve warm.
