Gingered Breakfast Pear Recipe

Served with a specialty juice, coffee, the first course at Anne's Oceanfront Hideaway is always the "Fruit Course"

Preparation time: 15 minutes 

Cooking Time: 40 minutes

Servings: 6

What you need:

·  7 pears peeled with stem left on

·  Juice from 1 lemon

·  6 cups of water

·  ½ cup granulated sugar

·  1 tablespoon ground ginger

 

What you do:

  1. In a large flat bottom pan with high sides, combine water, sugar and ginger.
  2. Heat and stir to dissolve sugar.
  3. Add pears, cover and cook over medium heat for 30 minutes or until tender.
  4. Uncover the pan and cool. Remove pears.
  5. Heat remaining liquid until it thickens to a light syrup.
  6. Cool syrup.
  7. For decorating plate slice 1 pear removing stem and core.
  8. Sprinkle with ginger and add a dollop of vanilla yogurt and a fresh mint leaf.
